I was wondering the same thing! I often have several weapons with me, but more because I like recreational shooting than for self defense. That said, I do keep hollow point self defense rounds in at least 2 mags when I'm not punching paper.
I never leave weapons in my van when I'm not on a trip, I too worry about theft. I wish there was a good way to make these rigs more theft resistant, but honestly between slim jims, punching out a lock, or just breaking a window, I don't see a reason to even start down that road.
I do, however leave a can or two of bear spray in the driver's side door compartment. For bears, of course.

I put a small safe, bolted down of course, under a cabinet - to lock up valuables and a Glock 21 when I'm away from the SMB.

I just bought and installed a Titan Gun Vault (titangunvault.com). Push button release with seperate compartment for clip or speed loader and it is 50 state legal. When you unlock the vault your handgun pops up for easy handling.
