Garage
The fluorescent ones were wider and had "Thinlite" branding and two fluorescent tubes inside. The ones pictured use three incandescent "festoon" bulbs (the kind that look like a glass automotive fuse with pointed ends, but bigger.)

Never done strips. Not even sure how to approach that. Would it allow me to keep the existing fixtures / switches?

Yes, it's super easy to keep the fixture, remove the old fluorescent guts, and lay in the LED strips. You can keep your switches. Everything works on the native 12v, no transformers or ballasts needed.

I also added this: it's super easy to incorporate into your LED swap:

Now, I never use the individual switches for the ceiling lights. I set up the controller to work for both. I love the dimming function. I keep it mounted to the pillar just behind the driver's seat. When sleeping in the penthouse, I take the controller up there to turn on/off the ceiling lights without having to get out of my bag.

Perhaps I was unclear on my question. How would you go about making the strips the right length and making them work? I see they can be cut to length, but how do you go about terminating them?

You can buy led strip lights by the roll. Just cut to the length you want. Solder on some wires for power and ground. No need to terminate the other end. You can link another strip by soldering wires on the other end and then the new strip to that. They draw barely any current.
I put 3 strips in my old fixtures in place of the bulbs.

This is a different light. Same idea. It’s effectively one long led strip with the power and ground soldered where it was convenient.
