I would not worry much about the cabinets or ceiling weight either. I've been on a 30-degree side-slope with thousands of pounds on my roof.

I do kinda agree with others. Tongue and groove ceilings under a metal roof isn't a very durable combination because of thermal changes. I did see one build where the planks were made with neodymium magnets epoxied into the plank instead of screws, and this was genius IMO. Plywood IMO is fine, provided you allow movement at the edges. Could probably do a plank-look laminate too, that would be less troublesome over time.
