Re: What do you cook - with recipes if poss.
Hi. We enjoy cooking both at home and on the road. We carry a two burner camp stove, a Coleman (works on top of the stove) and a charcoal b-b-q and do almost all our meal prep and cooking outside. Below is the menu for a recent 5 week road trip in eastern Arizona, Utah and Nevada.
Breakfast
Granola w/ fresh milk
Pancakes served with raspberry jam (use corn muffin mix)
Oatmeal (Not Instant)
Fresh baked cornbread or biscuits (I bring an oven)
Coffee, tea, fruit juice, fruit, hot chocolate
Lunch
Trail mix
Trail/breakfast bars
Crackers, cheese, smoked oysters, sardines, salami
Tabuli
Yogurt
Fruit (apples, oranges and grapefruit travel well. Also raisins, dried cranberries, dates, figs, prunes, apples and apricots)
Dinner
B-b-q salmon, sour dough bread and salad. (Bread and salad stuff lasts about 3 days) This is traditional 1st nite.
B-b-q steak, chicken, pork chops and sausage in no particular order
Pasta w/ bottled red sauce
Packaged Indian spinach curry
Cowboy paella (rice, red beans, jalapeno, sun dried tomatoes, chicken thighs, chorizo, pepperoni, canned clams, roasted red peppers)
Smoked salmon pasta (or w/ wild mushrooms) Neither of these require fresh ingredients
Vegetable curry - Assumes we find fresh veggies in sufficient variety along the way
Pasta Carbonara
Pizza on Pita Bread- pizza sauce, sautéed onions/bell peppers, olives, pepperoni, cheese and cook in the oven.
Pasta w/ Goat Cheese, Jalapenos and Green Beans-depends on finding decent gr. beans
Falafels-bring mix from home, serve in pita or tortillas w/ tomatoes, lettuce etc.
Dessert
Chocolate Orange Ball
Rice Pudding
Up-side-down cake (baked in camp)
Pop corn
