...So I decided to build a new kitchen/galley cabinet for a few reasons.....

Here is my old setup: picture is before finishing the little door under the sink....been using this for a few years.

Things that I wanted to change:

Get fridge off of the floor

Move microwave to front of the cabinet (I always had to move stuff on the cushions to use the microwave..)

Get more storage for cooking stuff

Move the sink further out from the side of the van to make it easier to use

So here is the new design......

This new design has left me with very little countertop, so I put in a couple of other features here that I forgot to snap pics of....so hopefully tomorrow.

Nice woodwork as always. I love having the fridge off the floor.

Looks great! And by little countertop, you mean none

The angle of the driver's seat back is annoying to work around. And Ford doesn't give us much leg room so it has to be all the way back. Good solution with the offsets.

Thanks for the comments! .....almost done.....

Here is one of the "countertop stretchers.."

The large drawer has locking slides and right now has a starboard insert to support my butane stove for when I need to cook inside. If I wasn't so lazy I'd make a breadboard insert out of wood scraps....

All of the drawers are lined with fuzzy trunk liner to keep the noise down while driving. The fuzzy trunk liner that I bought in the past from a local supplier is no longer stocked in "dark charcoal" so I bought some online from parts express. Great color match but the old stuff is much easier to cut.

I built the entire cabinet from a sandwich construction method using 1/4" baltic birch on the outside and 1/2" BB where needed around the perimeter and where various things have to screw to the cabinet, like my power amps....to save weight.

..and finally...the other countertop extender....

A small locking slide pull-out that doubles as a silverware holder when not supporting beverages or my laptop.

Top black polycarb surface is a project leftover, I may make something else...

Extremely well planned & executed - If you're uncertain about the black polycarb top, have you considered a BPA Free plastic so it can double as a cutting board (maybe router a juice channel around the outer edges) ?
