Really nice work! I really have to get going with redoing mine...
The drawer slides for the galley are a clever idea, but I would be a bit worried that they are strong enough to keep the galley from breaking loose in the event of an accident. That's a heavy piece of furniture and you don't want it moving forward at high speed if it breaks loose. Maybe add two safety cables somehow as a backup anchor to the dinette?
In my van, the cabinet that SMB had mounted in that location had a thick bracket securing it to the floor and more tying it into the dinette bench.
